We use “00” durum wheat flour in to make our Tarallini. The lower gluten content from durum wheat flour causes the dough to be strong but not very elastic. This means that with durum wheat, we get a nice bite on our Tarallini, but not as much chew.
We use organic “Senatore Cappelli” flour. It is an heirloom durum wheat flour with a bright amber hue, subtle sweet, malty flavor and pleasing supple texture.
Most of the products we carry are vegan. The products that ARE NOT would be our cookies, the Pan di Stelle Cream and our Capers, Almond & Grana Cheese spread.
We recommend cooking the Casereccia, Orecchiette and Paccheri for 10 minutes and the Sedanini for approximately 6 minutes for “al dente” texture.
If stored in an airtight container or bag, the Tarallini will stay fresh for several weeks. They have approximately a 12-month shelf life
Yes, the Cantuccini and Cantuccuione contain almonds and the Alda Hazelnut and Orange cookie contains hazelnuts.
Our Sedanini pair well with thinner or creamier sauces. The Casereccia work best with chunkier or creamier sauces. The Paccheri is also wonderful with chunky or rustic sauces. The orecchiette are delicious with pesto, tomato sauces and our Vigne Vecchie pates.
